Specification Sheet

A usable specification sheet states tolerances, not single numbers. “Protein 55%” is marketing; “protein 55% ± 1.5, dry basis, AOAC 992.23” is a contract clause. The same applies to moisture (≤10%, AOAC 925.10), residual fat (≤1.5%), bulk density (state g/L with a range), sieve distribution (percentage retained on each mesh), and rehydration ratio (state water temperature and soak time, because 1:3 at 80°C for 12 minutes is a different result from 1:3 at 25°C for 30 minutes). If a parameter has no method and no tolerance, it cannot be enforced, and it will be the parameter that drifts.

Microbiological Report
Require total plate count ≤10⁴ CFU/g, coliforms absent, and Salmonella negative. These thresholds align with Codex and retailer codes; anything looser risks border rejection.
Ask for the full panel rather than a single line. A defensible TVP micro report covers total plate count (ISO 4833), yeasts and moulds (typically ≤10² CFU/g), coliforms, E. coli, Salmonella negative in 25 g (ISO 6579-1), and where the destination market requires it, Listeria monocytogenes and Bacillus cereus. Confirm the sampling plan too: a single grab sample from a 20-ton lot is weak evidence, whereas a composite drawn across the lot at defined intervals reflects reality. Note also that extruded TVP leaves the die effectively sterilised by heat and shear; most microbial findings therefore indicate post-extrusion recontamination during drying, cooling or bagging, which is a plant hygiene question worth raising directly.
Shelf Life & Storage Conditions
The shelf-life sheet must state duration (typically 12–24 months), storage temperature and humidity, and packaging barrier specs — all of which protect product during long sea freight.
A shelf-life claim without conditions is unenforceable. The sheet should specify storage at ≤25°C and ≤65% relative humidity, away from direct sunlight and strong odours, on pallets clear of the floor and walls. It should identify the packaging that the claim depends on — for example a 25 kg woven outer with a 0.08–0.12 mm PE inner liner, or a foil laminate for high-humidity destinations — because the same product in a plain woven bag will not hold the same shelf life. Set the expectation once and apply it every shipment. Request the standing pack — certificates, allergen statement, shelf-life sheet and specification — during qualification, and the per-shipment pack — COA, micro report, packing list, invoice, bill of lading — before the vessel sails, not after arrival. Keep a simple register recording lot number, COA values and your own retest values, so drift becomes visible over four or five shipments instead of surfacing as a customer complaint.
